How to Choose Quality Rice — A Buyer's Checklist

Whether you are a retailer, restaurant owner or household buyer, the same five checks separate good rice from bad:

  1. Broken percentage. Fewer broken grains = better cooked texture and less cooking loss. Quality regular white rice runs low-broken; premium varieties are near whole-grain. Ask your supplier the broken percentage — a real wholesaler can answer.
  2. Moisture content. Over-moist rice breeds weevils and shortens shelf life. Well-milled rice holds 12-14% moisture. If the bag feels heavy and the grains stick to a warm hand, suspect moisture problems.
  3. Grain integrity. Look for uniform grain length and colour. Mixed lengths or chalky grains signal inconsistent milling.
